My love for cooking started when I was a kid, long before I understood techniques, tools, or the science behind a dish. All I knew was that food had the power to bring people together, to comfort, spark conversation, and turn an ordinary moment into something memorable.

As I grew, so did my curiosity. I spent years cooking for friends and family, experimenting in the kitchen and slowly learning how ingredients behave, react and transform.

I discovered that great cooking isn't just about following recipes. It's about understanding why things work — how to balance acidity, build flavour, get the texture right, or make a few small changes that completely transform a dish.

On Tom's Table is simply a place for me to keep all of that.

It's my personal collection of the recipes I've cooked, developed and loved enough to want to make again. Somewhere I can document them properly, photograph them, remember them, and share them with anyone who fancies putting them on their own table.

You'll also find reviews of restaurants and food I've experienced along the way — not because I'm trying to be a restaurant critic, but because some meals are simply worth remembering.

There doesn't need to be much more to it than that. I love food, I love cooking it, and I love sharing it with other people.

If you've ever seen Ratatouille, there's a moment where Remy finds some cheese and a mushroom after being separated from his family. A lightning strike accidentally roasts the mushroom, and instead of simply eating what he's found, he combines the two and creates something new.

Moments like that are moments to be shared.
